Ingredients
1cupRice (short grain rice preferable)
¾cupSplit moong dal
4cupsWater + 1 cup extra to adjust consistency
2tspSalt adjust to taste
Tempering
2-3tbspGhee (Clarified Butter) (Vegans can replace with oil)
1tspCumin seeds
1tspBlack pepper corn (whole or crushed)
2Green chillies slits
1tspGinger finely chopped
10-12Cashew nuts
1Sprig curry leaves
1pinchHing (Asafoetida)
Instructions
Start the instant pot in SAUTE mode and heat ghee in it.
Add tempering ingredients which are Jeera, black pepper, green chilli slits, chopped ginger, cashew nuts, curry leaves and hing(Asafoetida).
Saute for 1 min until all ingredients roasted well and remove tempering to a separate bowl.
Add washed moong dal and fry for 2 mins or moong dal become light golden brown.
Add washed rice and mix well.
Add water and salt to taste.
Close the lid on the pot, and turn pressure valve to SEALING position.
Set the pot to MANUAL/PRESSURE COOK (High Pressure) and set timer to 8 minutes.
Once the pot beeps, wait till the pressure releases naturally. Then, open the lid and mix everything well.
Turn on saute mode and add 1 cup of water and cook for 2 minutes or till mixture boils.
Instant Pot VenPongal or Khara Pongal recipe is ready, serve hot with chutney or sambar.
