Tindora | Dondakaya | Ivy gourd Fry Recipe - Air fryer

Dondakaya is also known as Ivy gourd, Scarlet gourd, Kovakka, Tendli, and Toni. This recipe goes really well with sambar rice, dal rice, Bisi bele bath, or curd rice.

Ingredients

  • 250 grams Dondakaya (Ivy gourd, Scarlet gourd, Kovakka, Tendli, and Toni)
  • 1 ½ tsp Red chili powder
  • ½ tsp Turmeric
  • 1 tsp Salt adjust to taste
  • 2 tsp Oil
  • 1  Sprig curry leaves
  • 1 tbsp Rice flour
  • 1 tbsp Corn flour
  • ½ tbsp Besan
  • ½ cup peanuts

Instructions

  • Rinse 250 grams Dondakaya (kovakkai or tindora or tendli) very well in water. Drain the excess water. then thinly slice of the top and bottom ends and discard them. Slice the dondakaya vertically in four parts.
  • Add 2 tsp oil to the Dondakaya pieces and mix well and then add salt, turmeric, chili powder and mix all spices with Dondakaya pieces.
  • Then add 1 tbsp rice flour, 1 tbsp corn flour and 1/2 tbsp Gram flour/besan to the Dondakaya pieces and mix well.
  • Spread Dondakaya in an air-fryer in a single layer and cook for about 5 minutes. Then shake the basket and cook for 5-7 more minutes till they are light golden brown.
  • Add 1/2 cup peanuts and curry leafs and fry for 2mins until peanuts are roasted well.
  • Transfer peanuts and curry leafs to dondakaya bowl and toss them well. If required sprinkle salt and toss the fried dondakaya. Serve hot with sambar rice.
